All of our fresh pasta has one thing in common that is recognizable on the first bite, the Bennati dough. It can only be made here, from the water and air of San Martino where it is produced. Our unique pasta is distinguishable even before tasting by noticing the yellow color which indicates the high quality egg yokes, and to the touch you notice the roughness in this bronze drawn pasta which allows the pasta to better hold a sauce.

Long like tagliatelle, short like maccheroni, soft and delicious with the hand-made gnocchi, our pasta is the essence of simplicity in the traditional format. They are technically referred to as ‘smooth pasta’ in that they are not filled, but the surface contains a particular roughness that allows the pasta to better hold the sauce. They are excellent with a simple knob of butter and some grated parmesan, and are really enhanced with flavorings based on meat, vegetables, fish, or creamy cheese.

The high quality, hand-made Bennati gnocchi are so soft and delicate that they literally melt in your mouth. The secret is in the production, the combination of top class ingredients, and an attention to detail; floured and packaged fresh so as to need only a brief cooking time, you can choose to enjoy them with a simple tomato sauce or enrich them with a meat sauce, a satisfying and substantial dish.
